English Muffin Mini Pizza Recipe

Making English Muffin Mini Pizza is very easy. These are one of my freezer bulk meals/snacks that I like to keep on hand. They also work really well for a fast and simple lunch for kids when you’re short on time. You only need a few basic ingredients you likely already have around – it’s a fun and easy recipe.

Who says pizza night has to be complicated? These little pizzas are a blank canvas to endless flavor possibilities. They are a great solution to busy weeknights, quick lunches or a fast snack.

English Muffin Mini Pizza

An easy snack or lunch. Great for storing in the freezer too!

Ingredients
  

  • 3 cups Mozzarella cheese This varies depending on how much cheese you add, so plan for more or less.
  • 2 packs English muffins
  • 1 1/2 cups Pizza sauce or tomato sauce I just keep the jar close by, this varies by how much you put on each pizza.
  • 1 pack Mini pepperoni Large are fine also, I have cut them into fourths and used them.

Method
 

  1. Lay out wax or parchment paper on a sheet pan, and lay your split english muffins open side up. You can also lay it on the counter on parchment paper.
  2. Begin by adding tomato sauce to each one and spread evenly.
  3. Next, sprinkle the desired amount of cheese to each one.
  4. Last, add pepperoni to the top.
  5. To store these, lay a gallon size bag on the counter and layer the pizzas inside separating each layer with a piece of parchment or wax paper. I use the same parchment I used for assembly and cut it to fit so I don't waste.
  6. Make sure you hold them flat and lay them flat in your freezer.
  7. When you are ready to eat one, preheat your oven to 400℉ , watch them carefully taking them out when the cheese has fully melted to your desired taste. About 10 minutes.

Whether you like a simple cheese pizza or you like to pile on the veggies and protein, you can easily customize your english muffin mini pizza to your liking. They are a great way to use up leftovers too. From cheesy hamburger pizza to BBQ chicken, feta spinach and basil. The possibilities are endless.

Some of the ideas below do not do well with freezing. If you are making them in bulk. So, choose your ingredients based on a fast meal or freezing.

  • Red onion, green and red peppers
  • Spinach, chicken and a white cheese sauce
  • Basil, feta, fire roasted tomato with red pepper flakes
  • Chicken with a BBQ sauce
  • Chicken and buffalo sauce
  • Mushroom and onion
