When I was younger I used to go to a local cafe with my aunt. Italian soda was my all time favorite drink to get. I have since wanted to make one of my own and haven’t until NOW!

This drink is smooth, sweet, fizzy, and so good! The cream softens the sharpness of the Red Bull while the vanilla berry flavor gives it a sweet dessert-like flavor that tastes almost like a creamy cotton candy with an energy boost.
I started calling this drink a Cloud Rush because it has that light, creamy flavor while still giving you the fizzy kick of an energy drink.
It only takes two main ingredients—Red Bull and cream—with endless optional flavor combinations.

Cloud Rush is a creamy red bull drink made with:

1/8 cup half and half
full cup of ice

2 Tbs. flavor syrup
Whipped cream

How to Make a Cloud Rush
- Fill a glass to the brim with ice. Make sure your glass is large enough to fit the entire can plus the other ingredients you want to add.
- I like to add my cream first, this makes it float up through the Red Bull giving it a swirled look, but traditionally it is floating on top.
- Pour in the Red Bull
- Add Syrup if you choose
- If you want the cream floating on top add it now.
- Gently stir and enjoy immediately.

How do I stop the cream from curdling?
You can easily lower the chance of this happening in a few ways:
Change the order: Fill your glass with ice, syrup, and soda first. Stir them together completely, then pour your cream on top at the end.
Upgrade your dairy: Swap out any low fat dairy with half and half or heavy cream. Higher fat content naturally resists curdling. (But, it still may happen depending on the acidity level.)
Prep the cream: Mix a splash of syrup into the cream in a seprate cup before pouring it into the soda. This can stabilize the protein first.
What is the difference between an Italian soda and a french soda?
It all comes down to the dairy! An Italian soda is just flavored syrup, ice, and carbonated water. (Some use sprite) Once you add a splash of cream or half-and-half to the recipe, it technically becomes a “cremosa” or a French soda.
Can I make these dairy-free or vegan?
Absolutely! However, standard plant milks like almond or soy milk are thin and highly prone to curdling in soda. For the best dairy-free Italian soda, use full fat oat milk or a splash of sweetened coconut cream. They offer the exact same texture without separating as much as other non-dairy milks.
Which Red Bull should I use?
You can use any Red Bull. Some will be more prone to curdling than others. I love using Iced Edition Vanilla Berry, it is one of my favorite flavors.
How long will this stay good?
It is best to drink this right away due to the curdling. If you need to make them fo an event, it is best to have the cans out and have the cream on hand to make them when they are requested. They do not keep well in the fridge for long periods. Drink this as you make it.
