These Arctic S’mores are the perfect low-calorie no-bake dessert. They are great for for any summer days when you don’t want to turn the stove on, or any season in-between. They’re a fun twist on a classic campfire treat and an impressive dessert that both kids and adults will love. The best part? They’re super easy to make, and you can even get the kids involved in the fun.
As a teenager I used to take Kung-Fu lessons. My instructor who was also our family friend introduced me to these delicious treats. It was a hot summer day, my father and I were out driving and decided to stop in to say hello for a few minutes. During this visit he gave me a dessert that was very much like the ones I make now. I was instantly hooked. I’ve been making them ever since and have added my own flare. Over the years, I’ve tried changing my recipe by adding fruit, using colored sprinkles, melting the chocolate first and so much more. I hope you enjoy them as much as my family and I do.
Why These Are a Must-Have Treat?
Whether the summer sun is blazing or freshly fallen snow is glistening. I always hear the kids constant pleas for a cold treat. This is one recipe that will not disappoint.
- Easy to Make: With no baking or complicated steps, this recipe is perfect for last-minute gatherings or a fun activity with kids.
- No-Bake: this is great especially during warmer months, your kitchen stays cool and your energy bill low. They come together in minutes and just need a little time in the freezer to set.
- Lower Calorie: Unlike high-calorie ice cream or a Popsicle, these Arctic S’mores are a lighter alternatice that won’t derail your healthy eating goals.
What You’ll Need
- Graham Crackers: The classic S’mores base.
- Cool Whip: For the “white arctic” layer.
- Hershey Chocolate Bars: You have to have the chocolate
- Colored Sprinkles of Your Choosing: The perfect finishing touch.
Simple Steps to Create Arctic S’mores
Prep the Crackers: Break your graham crackers into squares and lay them on a baking sheet lined with parchment paper.
Assemble the “Arctic S’mores”: Spread a small dollop of Cool Whip on the graham cracker to hold your chocolate in place. Then, add a chocolate square and a generous layer Cool Whip on each graham cracker. Note: When they freeze the chocolate can be hard to bite into for some. See my alternative way to make them down below.
Create the Sandwiches: Gently press another graham cracker on top of the Cool Whip to form a sandwich.
Add the Flair: Roll the sides of the sandwiches in sprinkles or candies.
Chill and Enjoy: Pop them in the freezer for about 30 minutes to let them set up before serving.

Tips, Tricks, and Variations
- Instead of a square of chocolate inside, melt chocolate and spread a thin layer on each graham cracker.
- Make these open-face Arctic S’mores. Lay one graham cracker down and spread a thin layer of chocolate on it. At this point, you can freeze them for about 10 minutes. After the chocolate has set, add a thin layer of Cool Whip and refreeze or eat right away.
- Alternatively, you can melt the chocolate in a double boiler and add it to your graham cracker, and immediately add your Cool Whip.
Flavor & Ingredient Swaps
- Try Different Fillings: A thin layer of yogurt, or even peanut butter can work in place of Cool Whip. These will completely change the flavor and texture offering more variety.
- Try a Different Chocolate: Use dark chocolate, white chocolate or even caramel filled chocolate bars for a unique twist.
- Add Toppings: Before freezing, sprinkle the Cool Whip with toffee bits, a thin layer of jam, crushed cookie, or fresh fruit.
A Note on the Chocolate: When the chocolate freezes it can be quite hard to bite into. This can be especially true for young children or elderly. To avoid this, follow the calorie-cutting tip of melting the chocolate and spreading a thin layer on the cracker. This keeps the chocolate’s rich flavor without having a hard time biting into them.
How to store Arctic S’mores
Due to the graham crackers soaking up moisture and turning soft, I advise that you eat them within two to three days. I usually make these in smaller batches, allowing for two per person over those few days.
- Store them in an airtight container
- You can put them in individual baggies or wrap them in parchment paper or plastic wrap for easy access.
Enjoy this fun and delicious dessert! It’s a fantastic way to celebrate a summer holiday or a cold winter night.
