Are you craving a seriously delicious cookie? Look no further! These cookies disappeared in record time at my house. The secret is the irresistible chocolate and the hint of almond that elevates these chocolate cookies to the next level.
What truly makes these a decadent treat is the pockets of warm gooey marshmallow in every bite. These chocolate marshmallow cookies are the perfect combo of chewiness, crispy edges, and gooey melt in your mouth chocolate that will satisfy even the most intense chocolate cravings.
Tips
- Dough: Don’t over mix the dough or the cookies will turn out tough.
- Saving for later: If you want to make the cookies to save for a later time, you can freeze the dough.
How: Just place individual cookie dough balls on a baking sheet and freeze them until solid. Then transfer them to a freezer bag and store them for up to 3 months. - Toppings: Get creative with your toppings! You can add almonds, sprinkles, or even peanut butter chips.
- Fluffier cookies: Put your dough in the freezer for about 20 minutes. Then, make them per the instructions. This dough is sticky after it comes together, so it is best to chill the dough so you can shape it easier. Freezing for 20 minutes, fridge for 3 hours, or fridge over night are optimal. Choose whichever fits your schedule. I have made them without this method and they came out just fine, but they are much fluffier when you freeze the dough first.
Ingredients For Chocolate Marshmallow Cookies:
- Wet Ingredients: Butter, granulated sugar, brown sugar, eggs, almond extract, and vanilla extract.
- Dry Ingredients: Flour, baking soda, salt, and cocoa powder.
You will also be using marshmallows and semi-sweet chocolate chips. You could do a mix of chocolate and peanut morsels. I used this type for this recipe because that’s what I had on hand. They came out pretty good.
Almond Extract is Optional
The almond extract is an optional flavoring and can be substituted with extra vanilla or another flavor of your choice. You can also add some chopped almonds to the mix to enhance the almond flavor.
Steps
Step 1:
Preheat your oven to 325 degrees and line two cookie sheets with parchment paper.
Step 2:
Cream the butter, sugar, and brown sugar together. Then, add the eggs and extracts and combine.
Step 3:
In a separate bowl mix the flour, cocoa powder, baking soda, and salt.
Step 4
Combine wet and dry ingredients.
Step 5:
Fold or mix in chocolate chips and marshmallows.
Step 7:
For best results, place the cookie dough into the freezer for about 20 minutes. If you are in dire need of a cookie you can skip this step.

Step 8:
In about 2 TBS increments, scoop out dough and place onto prepared cookie sheets.
Step: 9
Bake at 325 degrees for about 12 minutes. You will have to monitor the time and adjust to the size of your cookie and oven.
How Do You Shape The Dough
You will find that when this dough comes together it is very sticky. Even after chilling it it will still be sticky but much easier to work with. You can use a cookie scoop to make things easier or a tablespoon will work as well.
How Do You Tell When Chocolate marshmallow Cookies are Done?
It is hard to tell when the cookies are done because of the darker color. If you still see a shine to the cookies they probably need a few more minutes. You could also test the cookies by pressing on the edges of the cookies to see if they are set.

Are frozen cookies the same as when you cook them right away?
Texture, size, and flavor may be affected by freezing the dough or the individual cookies. However, they will still be scrumptious.
How long are the cookies good for?
These cookies will last for about 5 days if they last that long! After that they start to get more chewy and crunchy. If you place a slice of bread into the container this will transfer some of the moisture to the cookies and they will be soft again for a little while.
