Chocolate Marshmallow Cookies

Delectable, sweet, and chewy chocolate cookies that will have you coming back for more. Add some Almond extract for an extra delicious flavor

Ingredients
  

  • 1 C. Unsalted butter
  • ¼ C. Granulated sugar
  • ¾ C. Brown sugar
  • 2 Eggs
  • ¼ tsp. Almond extract
  • ¼ tsp. Vanilla extract 1 tsp. if you skip the almond extract
  • 2 C. All purpose flour
  • 1 tsp. Baking soda
  • ¼ tsp. Salt skip the salt if you are eating Loso
  • 2 C. Marshmallows pre frozen works best
  • 1 C. Chocolate chips
  • ½ C. Unsweetened cocoa powder

Method
 

  1. Preheat oven to 325° and line two cookie sheets with parchment paper.
  2. Cream the butter, sugar, brown sugar and eggs together. Then, add almond and vanilla extract and combine.
  3. In a separate bowl mix the flour, cocoa powder, baking soda, and salt.
  4. Combine the wet and dry ingredients.
  5. Fold or mix in Chocolate chips.
  6. Cut the marshmallows into small pieces about 3/4 in. pieces and fold them into your batter. (For best results freeze the marshmallows after they are cut fore folding them in.
  7. In about 2 TBS. increments scoop out dough and place onto prepared cookie sheets.
  8. For best results place cookie dough into the freezer for about 20 minutes. If you are in dire need of a cookie, go ahead and bake them and skip the freezer.
  9. Bake at 325° for about 12 minutes. You will have to monitor the time and adjust to the size of your cookie and oven.
