If you’re looking for a simple, protein-packed snack that actually tastes good and satisfies that “crunch” craving. These homemade roasted chickpeas are about to become your new favorite. They are naturally vegan, gluten-free, and much more affordable than the store-bought versions. Plus, making them at home means you control the ingredients and the salt!
This is one of those recipes you can throw together quickly, and once you start making them, you’ll keep coming back to it, and wanting to experiment with flavors.

Ingredients You’ll Need
- 2 cans (15 oz) Chickpeas (Garbanzo beans): Drained, rinsed, and patted very dry.
- 2 tablespoons Olive Oil: Or your favorite neutral cooking oil.
- 1 teaspoon Sea Salt: Adjust to your taste.
- Optional Seasoning: Smoked paprika, garlic powder, or even a dash of cumin for an earthy flavor.
Step-by-Step Instructions
Prep the Chickpeas: Preheat your oven to 400°F (200°C). The secret to the crunch is making sure your chickpeas are bone-dry. After rinsing, roll them between two paper towels to remove as much moisture as possible. I do this about two times to be sure they are very dry.
The First Roast (The Secret Step): Spread the chickpeas on a bare baking sheet. Roast them for 15 minutes without any oil or seasoning. This helps evaporate any remaining water so they get truly crispy instead of mushy.
Oil and Season: Carefully remove the pan from the oven. Drizzle the chickpeas with olive oil and sprinkle with salt and spices. Toss directly on the pan until every chickpea is coated.
Final Roast: Return them to the oven for another 15–20 minutes. Give the pan a good shake halfway through. They may require more time than this depending on elevation and other factors. They are done when they are golden brown and sound somewhat hollow when you shake the pan.
Cooling is Key: Turn off the oven and crack the door open slightly. Let them sit inside for 10 minutes. This extra step ensures they stay crunchy even after they cool down completely!
Quick Tips for Success
- Don’t crowd the pan: If the chickpeas are too close together, they will steam instead of roast.
- Storage: Keep them in an airtight jar, but wait until they are 100% cool before sealing. I have kept mine in a dessert bowl slightly covered and they were fine the next day, they usually don’t last longer than that around here.

How to Make Homemade Roasted Chickpeas
Ingredients
Method
- Preheat oven to 400 °F. Drain the chickpeas and rinse. Pat them dry between two paper towels to remove excess water. Be sure they are very dry.
- Spread the chickpeas on a bake sheet lined with parchment paper. You can roast them for 15 minutes to absorb excess moisture. (You can skip this part and move to the next step this is only optional)
- Drizzle the chickpeas with a small amount of olive oil, sprinkle with salt and pepper and other spices and roll them around or toss to coat evenly.
- Bake them for approximately 20 minutes. Give the pan a good shake at about the 10 minute mark.
- Your chickpeas may require a significantly higher amount of time. Just reset your timer and check on them every 10 minutes. They are done when they sound somewhat hollow. When you bite into them they will be crunchy without any softness inside.
- Turn off the oven and crack the door slightly. Let them sit for 10 minutes. This step ensures they get crunchy as they cool (optional)
